Good Healthy Dinner: Sweet Potato Broccoli Curry - Broccoli Sweet Potato Curry This is easy to do in an instant
- and you can adjust the spice to your taste. Another advantage: you can peel
and chop everything in advance, cover and refrigerate until ready to toss into
the pot dinner time arrived.
Note: This is best with regular coconut milk, which has a
lot of flavor and keeps it together makes, even when boiled. If you choose to
use coconut milk low in fat, do not boil or it will separate.
INGREDIENTS
- Two sweet potatoes
- One head or about 1 pound of broccoli
- Two cloves of garlic
- 1-3 fresh hot chilies
- Four green onions
- 1-inch piece of fresh ginger
- 2 tablespoons vegetable or canola oil
- 1/2 teaspoon fine sea salt
- 2 cans (15 ounces each) coconut milk
- Cilantro for garnish (optional)

Good Healthy Dinner: Sweet Potato Broccoli Curry
PREPARATION
- Peel the potatoes and cut them into small pieces. Trim
broccoli and cut into bite-size pieces; peel the broccoli stems and cut into
thin slices.
- Chop the garlic, finely chop the chilies, cut green onions
and grate the ginger.
- In a medium saucepan over high heat, heat oil. Add garlic, chilies,
onion, ginger and salt. Cook, stirring, until sizzling and fragrant, about 30
seconds. Add the sweet potatoes and coconut milk and bring to a boil. Reduce
heat to simmer and cook for 10 minutes.
- Add broccoli and cook until vegetables are tender, about 10
minutes.
- Serve hot with steamed rice and garnished with cilantro, if
desired.
