Good Healthy Dinner: Roasted Cauliflower with Cheddar Sauce
This is a tasty way to enjoy cauliflower and is very easy to
prepare.
The cauliflower is roasted in about 25 minutes while you
make the sauce quick and easy cheese. Serve as an accompaniment to a meal every
day, or serve as part of the holiday meal.
INGREDIENTS
- 1 large head cauliflower, broken into pieces *
- 3-4 tablespoons of olive oil
- Kosher salt and freshly ground black pepper
- Cheese Sauce
- 1-tablespoon butter
- 1-tablespoon flour
- 1/4 teaspoon dry mustard
- 3/4 cup milk
- 3/4 cup shredded Cheddar or Cheddar Jack, 3 oz
- Salt and freshly ground black pepper, to taste

PREPARATION
- Heat oven to 450 ° F (230 ° C / Gas 8). Line a baking pan
with foil and grease or spray with nonstick cooking spray.
- In a large bowl, combine the cauliflower with olive oil. Out
in a single layer on baking sheet. Sprinkle lightly with salt and pepper.
- Cauliflower roasting for 25 to 30 minutes, turning 2 to 3
times during cooking.
- Meanwhile, prepare the sauce.
- In a saucepan, melt butter over medium-low heat. Add the
flour and mustard powder and cook, stirring constantly, for 2 minutes.
- Gradually whisk in milk. Continue cooking and stirring until
thickened. Add the cheese and continue cooking until cheese is melted.
- Add salt and pepper to taste.
- Remove the roast to a serving dish and sprinkle with a
little cheese sauce cauliflower. Place the remaining sauce in a small bowl and
serve with the cauliflower.
- Break into large florets and slice or break the head of
cauliflower into small florets individual.
- Makes about four servings.
